It’s cooollddd! Is the cold an appetite suppressent!? I didn’t want lunch before I had it and I was even more full after…I think I have a food baby! So much so all plans of baking a nice chocolate fudge cake have vanished – I don’t even want to move, let alone think about cooking a bigass cake! I think this might be leftover illness talking to be honest, I normally have an endless appetite. PECULIAR!
I resorted to one of my favourite soup recipes for my luncheons -Thick Squash and Butterbean Curry Soup!! I have a lot of squash that needs eating pronto so I thought it would be the best way
My soup went something like this:
- garlic
- 1/2 a stock cube
- acorn and kabocha squash
- butter beans
- a korma curry spice blend
- onion
- leftover philadelphia (from Christmas salmon blinis! I can’t believe it’s kept that long..)
My instructions:
cut up abbbouut 230g ISH of squash, and thinly slice the onion and garlic.
Saute the onion and garlic til softened in a big pot
Then add the cut up squash and as much or as little spice as you like! Saute that for a few mins
Then add about a 1/4pint of stock, and simmer it til it’s soft. Towards the end, add in the butterbeans.
I then blended in a spoon of philadelphia, and added in a splash of milk to thin it out a bit.
It turned out something like this (with a bit of grated parmesan on top
)
I also had a slice of wholemeal bread with PB on the side (check out the EMPTY JAR! I need to restock before it’s too late :s) – got to get those fats in there somewhere
Finally, dessert was a beautiful juicy fresh date – Those things are so darn tasty, I think they’ll be added to my Foods I Would Eat in My Last Supper!
I heard some terrible news today:
SNOW ALL WEEK! I knew it would be cold. I knew there would be snow. But not both at the same time! Snow is fun yes, and it looks pretty and it’s fun to play in..but I’m so sick of it now!! The arena is frozen and the roads are frozen and the water taps outside are frozen. Roll on the spring is all I can say!!
But on the plus side, we do get to light loads of fires
There is nothing better than a proper fire and a blanket and a mug of hot chocolate
Oh my gosh, I’m such an old lady!! All I seem to do the past few days is bake and sit in front of fires
I’ll be knitting next..eek :s

Haha, yeah I moan about it (the British are brilliant at that
) but I definetly couldn’t cope with LA heat all the time! I’m a spring/autumn girl, no extremes for me!
Chocolate brownie is the best of an EXTREMELY limited bunch here – I’ve seen the American site, the flavours you have are amazing! I’m so jealous lol
