OH MY. I cooked the orange soy salmon from Iowa Girl Eats, and seriously oh-my-gosh, that was the best salmon EVER! Seriously, I think I just had (one of, at least) the BEST meal EVER! Suuuuch tender, soft, flavourful salmon. I’m amazed! Seriosuly people, do that recipe!
The recipe consisted of a marinade/glaze made from orange juice, soy sauce, honey, crushed garlic and ginger. I used cinnamon instead of ginger (ginger is the Devil’s spice, it’s evil. I hate it. I want to run far, far away if it is even near me. NO KIDDING.) and agave nectar instead of honey. Twas accompnied by roasted everything: sweet potato, broccoli, acorn squash, parsnips and brussel sprouts (which I forgot to cut in half, so they weren’t as crunchy as I wanted them to be
), all sprinkled with some salt and garlic.

I then AMAZINGLY managed to do some lab report! Discussion now almost OWNED, so I now have an excuse to catch up on my magazines – I have an obsession with them (Cosmo, Glamour, Zest, Health & Fitness, Women’s Fitness, Vogue, Heat…), and it’s even more exciting cos my mama bought me a brand new magazine today (the LAUNCH issue no less!): Women’s Running! Aah, it’s the little things in life :p
Oh, and my evening snack: an unpictured hot chocolate, and some 2% greek with a tsp agave, and 2 pieces o’ Lindt dark chocolate:
I’ve had such a delicious, perfect day food-wise (bar the blip that was the hard smoothie…), I LOVE days like that
