Best view in the world? Isn’t that what people say about riding? I miss riding ever so being at uni, so to me, being on board Chika this morning was like the best view
Here she is all ready to be ridden (I left her winter woollies on the year, hence the fluffyness!!)

I love this mare so much! We did a little while in the arena, then I took her for a hack – literally our first one in about a month, cos of all the snow – and she had a GREAT time. She was so raring to go, she loved every second of all our canters (she even cantered through a deep puddle today, instead of avoiding them like the plague, then she did a big leap over the next one), and when we stopped at the end of the track, I took these photos:
I sometimes think people with horses are like people with babies – we take loads and loads of pics of them which all look the same, and show people them all, when really – no-one cares!! Haha
On the way back, we stopped in the massive deep puddle and she went crazy splashing herself, it was too cute – I even LOL’d out loud! She was far messier when we got back:
Lunch was oh-my-days delicious! Gosh I was blown away!! I picked up this new cheese yesterday, it caught my eye cos it’s made from sheep’s milk. I loooovve goat’s cheese, but I’ve never seen sheep’s cheese before, and this was the only sort they had so I nabbed it while I could.
I was very impressed with the 19g of protein per 100g :) So I had half the pack of this, and paired it with roasted cherry tomatoes, squash, artichoke, and spring onion, all sprinkled liberally with cinnamon
I piled it all onto a plate of spinach with the sheep’s cheese, and OH MY GOSH IT WAS GOOD! The cheese was DELICIOUS and just, wowza
such good flavour combos
It would have been brilliant with some sweet potato actually, and balsamic…
I actually forgot the carb part of my meal til the very last minute, hence the random milti-grain roll on the side. It was a tasty roll though:
But a little dry just by itself, so I went back to the fridge and got some hummus to have with it:
Muchos better!!
We then went to look at KITTENS! I say plural, but in actual fact, there was ONE lonely kitten at the shelter we went to:
He was called Cookie, and was the CUTEST thing you’ve ever seen!! He kept climbing up the cage and meowing, and he was just such a sweetheart. We fell in loveeee straight away and decided he was The One. So I stayed back to pet him, while my mum went to inform the people that we wanted him. She came back and guess what? The people in front of her at the que had just taken him!! I was so upset
When we got back home, we phoned up another cat shelter again (we’d tried to phone them first but there was no-one in, hence why we went to the other cat place) and it turns out they have a litter of three brothers! 5 months old, all waiting for homes!! We’re going to go see them tomorrow (so expect cute kitten photos :p) and pick two – though you never know, I’m hoping we come back with three….how can you leave one kitten behind!? IT’S A KITTEN!!
My snack this evening was a hot chocolate, and hot banana with cinnamon and Fru-Grains:
I hadn’t had one this morning, and I was really craving one..plus, my lunch held me over really well and I wasn’t in the least bit peckish, so fruit was ideal
For dins, I had sweet potato fries in mind, and that was all…But I needed to experiment a bit! So, I paired it with salmon, turnip and squash, and made a nice saucy thing…..
I crushed some redcurrent jelly in a bowl:
Then mixed it with garlic granules, s + p, worcestshire sauce, water and paprika, and poured it over the salmon fillet:
The veggies and potato (and garlic) just got some s+p and paprika…
and were roasted for a while til they were tasty and soft and perfect
After the salmon had sat there for a bit (well, only about 1/2hr cos that’s all the time I had), I fried it in the pan on both sides til it was cooked – but I made a big mistake – it had been frozen, I thought it’d de-frosted, but the middle was still a bit frozen! So when it came to cooking it, it took longer than expected to get the middle right, so the edges were a bit too cooked, then the middle just right. BUT saying that, it was still proper delicious!!
After it had cooked, I poured in the leftover water/sauce mixture and reduced it for like 6seconds, then poured it over the food, and it was done!
I loved the charred bits with the sweetness of the jelly, it was really delicious

And that was my evening! I’m going to go watch the results of So You Think You Can Dance in a bit, so I’ll say my snack now – 3 guesses!!?? I’ll be different soon!

Where do you get acorn squash from in the UK?
Good question!! I’ve found it in Waitrose once, but my gran told me a big farmer’s shop near where I live stocks lots of varieties, though I’m yet to see them…I’ve NEVER seen anything other than butternut in Tesco or Co-Op though, and those 3 are the only ones near me.
Spaghetti squash is the one I really want to find!!
Ohh I’m with you there! I would LOVE to try spaghetti squash! Waitrose? That’s a pity! I’ve never been to a Waitrose in my life… I live near Morrisons, Co Op, Tesco, Asda, Marks and Spencers and Sainsbury’s but no Waitrose. Boo.
