Before I post a whole bunch of pics of some every cute kittens (yaaaaaayyy!), my moning consisted of an apple and a tbsp of wheatgerm before I went on a 1/2hr 2.4mile walk/run. Breakfast was my old favourite – OATS! I feel like it’s been too long since me and proper stove-top oats had a date, so here they are in all their glory:

These had been hanging around for ages, and I couldn’t wait to taste them, especially after I saw them on a blog the other day! They were tasty, and softened up loads sitting on the oats.I also had some All-Bran as a topping:

Then, we went to go see some kittens (I bet you’re surprised to hear that, I don’t think I’ve even mentioned kittens the past few days!?). We are getting 2 of the 4, and we’re naming them Carter and Kovach (two fit doctors from ER…!). Here are some beautiful kittens (they’re 5months), and 2 rather skanky ones of me – I’m very tired!!

I’m actually thinking about coming home from uni purely to see them settle in
that’s how in love I am!!
After we saw the kittens, I rode Chika again and, as usual, she was a superstar
I even persuaded my mum to have a ride and she had a great time too! I was thinking yesterday how lucky I am to have a horse – my mum has worked her ass off to be able to provide for me and my sister, including paying for our horses; she left school with no qualifications at 17 to work with horses, but when my sister and I were little, she studied part time for a degree so she could have a complete career change (to a counsellor/drug therapist). She’s so awesome! We are far from rich or wealthy, and everytime I ride, it just makes me appreciate how much she has done for us – I’m so lucky to have her!
In a corny American way (:p), what is everyone else thankful for?
Moving swiftly on, for lunch, I decided to experiment a little bit – lentils, spinach etc etc…
I got 30g lentils and boiled them up with some sultanas, fenugreek seeds, garam masala, cumin and ground cloves…
Whilst also caremalizing 2 shallots with a pinch of sugar, and the same spices:
ALSO at the same time (I’m quite the multi-tasker), I roasted these veggies – squash, tomatoes, spring onion, artichoke and mushrooms:
With these spices – cumin, cloves and fenugreek:
Oh, and salt and pepper! But that goes without saying
When the lentils/sultanas were soft, I stirred in the onion and some spinach:
And served it with the roasted veggies and the rest of the sheep’s milk cheese on a pile of spinach!
It was really tasty, BUT it had a hint of bitterness – I’m not sure what this was from, maybe the fenugreek seeds as they caught a bit when I was cooking the onion? Ah that’s why I lover this cooking thing (and being at home with far more ingredients) – you learn so much!! I think some sweet something in the lentils would have worked welll…maybe cinnamon!!??
Has anyone else done much cooking with fenugreek seeds?
Anyways, no idea what I’ll do for dinner, maybe something very boring cos right now I am s-o-o- full!!

I am thankful for my Mum, too, she supports me in everything I do (sometimes good, sometimes not so much!) and I think I sometimes take for granted that she is always there… Plus she let me move back home rent free for 8 months at the age of 30 to save up and go travelling! My only job is to order and cook the food, but unfortunately I don’t always get to cook to my tastes – Mum is trying to cut down on her cholesterol, and her boyf is a meat and two veg man! I look forward to having my own place again so I can cook some yummy things like you do. I looooooooove lentils, could eat them every day, and they go fab with feta. I have used fenugreek before, but can’t remember when… in a curry I think. I love cumin seeds, too, fab toasted. Enjoy the rest of your day at home – the sun is out here
