…yes, only 1 more full day, then my exam will be over and my first deadline will have been ticked off
2 big weights GONE! Then, on Wednesday evening, Carter and Kovac arrive, and I’m going to be driving home specially, just to see them! I even picked up a cute little mouse toy in preperation
I had a truly delightful afternoon – I took a trip to my own personal Mecca:
Yes, the supermarket, the Holy Grail, the King of all Buildings! Especially this one, Waitrose, because yet again, I picked up the elusive Squash-That-Isn’t-Butternut-Squash-Squash!! It was Crown Prince on the menu today (personally I think it looks and tastes exactly like kabocha squash, but I’m sure squash experts would disagree) so I nabbed one sharpish. And I got a fancy new vegetable I’ve never seen before (reduced to clear of course) which I can’t even remember the name of – it’ll make an appearence tomorrow! You know what else I love about Waitrose? They have an amazing cafe with all these groovy looking cupcakes – like proper pretty ones, they look like they’re from The Hummingbird Bakery or something! One of these days I’m going to get one
My afternoon snack was this Rachel’s Organic milk chocolate flavour yogurt (with surprisingly pure ingredients, nothin’ fancy – hence why I bought it):
It had a lovely texture – thick and smooth and REALLY GOOD – but it tasted almost bitter!? Not milky or particuarly choclatey at all! But all the same, it was worth eating – and I got 3 more to get through before the 30th (sell by date) so expect to see again. I also had a hot chocolate in this beautiful mug:

I actually managed to cook a little bit today. While I was home over the weekend, I re-discovered some tofu which was buried deep in the freezer, so I brought it back with me. I cut the block in half, and mariated half of it in soy sauce, paprika and agave nectar, all ready for tonights dinner…to go with it, I did 50g (dry weight) bulghar wheat, which was cooked with 1/2 a low salt stock cube, a shallot, cinnamon and paprika:
I also roasted up some parsnip, garlic, and the beautiful squash!
I stir fried the tofu for about 5 or 6 mins:
Til it was really golden and starting to char a bit. Then, dinner was served!
WHHHYY does tofu get such bad press?? I’m telling ya, this tofu was AMAZING! It was SO tasty, better than the smoked tofu I raved about a week or so ago, better than any tofu I’ve ever had! When cooked right, tofu is just as good, if not better, than chicken or fish, I wish people would give it a chance..poor old tofu
I actually think I might buy some more tofu and cook it like this for my mum – she’s a tofu hater but I reckon I could convert her….
I then spent an hour finishing off my Career Development plan, and saved it to my pendrive for printing and handing in tomorrow (thank goodness), and then – after some email help from my lovely lecturer – I think I worked out why I kept getting the wrong answer to my stats practice test. That was the thing that had realllyyyy been grinding my gears :s So I went to check it on the website, all full of confidence, and the site was down!! GRRG.
SO I entertained myself with my usual evening snack – the old greek yogurt/hot chocolate/dark coffee chocolate combo – and attempted to piece back together my beautiful bar of Lindt that seemed to have got broken in transit:
It’s all healed now
– well, minus the two pieces I nicked this evening!
Anyway, I’m going to go see if I can get the answers to this test again…fingers crossed!!

I’ve never had it in a restaurant, but I definetly would now!
