Phew! I have achey legs now!! I really love that feeling, when you’ve worked hard and you can feel it in your body – it’s so satisfying! I guess running that bit faster must’ve really taken it out of me!!
Running far though also takes away one’s appetite…I seriously had to force myself to eat ‘lunch’ at 3pm! Cos I was so un-hungry (is that word..??), I kept it fairly light but dense in cals – I had the last slice of pizza leftover from last night, which I put in the oven for like, 7minutes (with some cherry tomatoes) to heat through:
The tomatoes look un-cooked, BUT when I bit into them, it was like a mini taste/texture explosion – all hot and gooey in the inside! They were so good
I took one bite out of this, then remembered what I wanted yesterday – BBQ SAUCE! So bbq sauce it was:
I was right (as usual
HAHA), it did taste really good
I also had some 2% greek, with a load of granola and papaya – basically a second breakfast..
OH such a good combination!
Afternoon snack – the last of my Rachel’s Organic yogurt things, and a hot chocolate:

I thought I’d be a bit imaginative with dinner tonight – I dug around in the freezer and found a lone piece of River Cobbler – soo I marinated it for a few hours (I made my discovery just after lunch) in 1tbsp + 1tsp of balsamic vinegar, the juice of 1 orange, lots of cinnamon, s + p, garlic powder and a 1tsp of agave:
Meanwhile, I softened some baby leeks (Grandmother-grown :p) in a pan…
….before adding in 40g dry soya mince and stock:
Then I stirred in my favourite veggies which I’d cooked too (parsnip and crown prince of course
)
Set that aside, and I got to work on my fish: I panfried it -
- til it was slightly charred and cooked through:
Then set it aside, and poured in the rest of the marinade into the pan:
That bubbled away for a few minutes til it was reduced to a syrupy consistency, then I poured it over my fish and BOOM – I had a fab meal!
SPARKLY!!
deeeeLICIOUS!! I adore cooking fish on the top of the oven and having a sauce reduction thing – it intensifies the flavours, and the fish stays so moist…it’s to die for
AND I made up this recipe – no doubt someone else has done the exact same thing a gazillion times before, but today – it was my creation
My evening snack was…..NOT YOGURT! NO, I had some Green & Blacks chocolate ice cream (& a hot chocolate):
That flavour was sooo much better than the other flavours I’ve tried on here; it was lovvveerrrly
After I finished that, I started to drive back to uni..I got 20mins into my journey before I realised I’d forgotten my phone - BAD NEWS! It acts as my alarm clock and…well, phone, as we have no ‘real’ phone in our uni house! Disaster…!! So at 10pm, I turned round and drove home to get it :s
EEK am I tired now! So I think that’s it for tonight, my bed is quite literally YELLING my name – it’s only fair that I go to it!!

That fish looks so tasty alongside all those veggies! The Green + Black’s sounds delicious…I’ve never had the ice cream, but their chocolate is to die for!
The dark chocolate ice cream is faaaab – though the real chocolate is better I think! Give me a chunk of G &Bs 70% and I’m a happy woman!!
oh no I can’t believe you had to turn round to get your phone. I would do that too as my phone is my lifeline! Your fish dinner looks amazing, you always cook great things, please do a recipe page! x
