Morning!! This is going to mess with my brain. It’s Wednesday, but I’m writing Thursday’s lunch and breakfast now cos I know I’ve got uni all day…do I write in past tense or future tense!!??
Well, I’ll write in past tense..then correct any untruths when the day is over
I started the day with a nice juiceh apple, before a hot date with my woman of the moment – Gillian Michaels. We got shredded for a bit, before I packed up and drove off to uni. On the way, I snack on an oat biscuit, before I had a bigass Green Monster smoothie for breakfast! In the mix – 1/3 cup oats, 2/3 milk, 50g ish greek yogurt, 2 big handfuls spinach, agave nectar and a banana…..[I'm assuming] it was very delicious!
When it was all blended up, it didn’t quite all fit into the beaker I had, so I resorted to a tiny old Pesto jar :p
I’m hoping people didn’t think I was too weird, drinking out of old jars…
Double cognitive psychology lecture followed – seriously, boring much? I hate cognitive with a passion. Learning about how the eye works or labelling an ear..it does not interest me! Give me social or developmental any day….anyways, lunch was lovely! I had a bit of a random mix. I was digging about in the fridge looking for tasty, yet different, veggies and couldn’t find much, so I resorted to the cupboard. I found a hidden gem!
Artichoke hearts! Hooray! I’ve never had them before, but I’ve read Caitlain over at Healthy Tipping Point rave about them a few times, so I was curious to try. I threw them on a baking tray with some broccoli and red pepper, and baked for about 20mins. I then added them to a garlic and herb flavour pitta, along with some pickle (the squeezy kind, not a piece of pickle), mushrooms, sunflower/pumpkin seeds (for crrrunch) and red pepper:
DEEE-licious!! [My Wednesday night self actually knows this will be - I tried an artichoke heart after it had been roasted and it was so so good....new veg obsession on the horizon mezbe?]
I knew that wouldn’t fill me up though; no protein. So I also made a little sardine salad, which had a lil tin of sardines, spinach, and the rest of the roasted veg:
You can just about see the sardines through the side, if you dig out your bifocals…
And for a bit o’ added freshness:
A kiwi and some cherry tomatoes
[Oh my gosh, writing this now, knowing what's to come...I'm almost drooling.....]
And they were my eats!
Wednesday night self thinks I may have gone for a quick run in the afternoon, after a day of being stuck indoors – but you’ll have to wait and see whether this prediction came true
