Seeing as WordPress misbehaved last night, and to make up for my slightly lacking in interest post this morning…I thought I’d make today a triple-y awesome post! My theme for this: THREE! Why? Because I’ve had three stressful events today, so I feel if I make this triple-y awesome post, my three negative will be cancelled out
Let’s get the nasties out the way:
- Manic stressful lab class, where the people in the group who had the data didn’t show up for a good 15-20mins, so those of us that DID show up were in major panics! (And then I had to take over re data analysis as no-one else would do it…cue 2 hours of S.T.R.E.S.S.)
- Roadworks and crazyass traffic driving home! Booooo!!
- All my stuffed pasta bursting when I cooked it :’(
Now onto more positive THREES!! A few top THREES in fact! Starting with:
Top Three Foods I Hate:
- Cauliflower – what kind of fool invented this? Probably the same one that invented the next two:
- Cooked cheddar cheese
- Fennel. Blerh.
Top THREE Actresses:
- Kate Winslet – Beautiful, British, real, she doesn’t conform and she’s an incredible role model and actress!
- Blake Lively – 5ft9 (like me!) and proud of it. Love. Her.
- Jennifer Aniston. Do I really need to say why!? It’s Rachel!!
Top THREE Actors:
- Leonardo Dicaprio – he’ll always be Jack Dawson in my eyes… <3
- Arnold Schwarzenegger – two words: The Terminator.
- Oh number three is a stonker….I can’t think of one eck! I’ll say Brad Pitt, because he’s beautiful – circa 2004 of course, not now he’s all beardy :s
Top THREEActivites:
- Reading (magazines, books, minds…)
- Food-ing(cooking, baking, eating, shopping for, smelling, touching, I could go on!)
- Exercising (riding, running, swimming, aerobics)
See how clever I was there, giving more than one activity for each…activity!? I’m sneaky like that

Onto the food and stuff -
I ate my little chickpea salad driving home (not recommended, it’s very dangerous. Ssshhh!) which was totally delcious - kiwi and chickpeas are a match made in heaven!
After a rather long commute, I FINALLY got in, and released some pent up frustration on Jillian part III, and 10mins of Tae Bo. Oh boy I felt so much better after that!!
I then got cracking on dinner (no afternoon snack today! My appetite packed up and left :s how weird!? I think maybe it’s the incredible stress I’m feeling today. EXTREMELY hard lab report + lots of reading and revising to do = one stressed out blogger) – stuffed pasta with homemade BUTTERNUT SQUASH AND WALNUT SAUCE!
Twas easy peasy:
I cut some squash into little chunks, and put it in a pan with sage, nutmeg, salt, pepper and garlic, and let it cook for a few mins.
I then added in just a little bit of water, enough to let it boil til it was cooked…
Then I blended it with 2tbsp milk, and adjusted the seasoning by adding in a pinch of sugar and a squeeze of agave. It had almost had a slightly bitter taste, so that sweetened it up to perfection
Then I stirred in a tbsp of crushed walnuts. Voila! Sauce complete!!
I had it on some pumpkin and pinenut stuffed pasta (comfort food. I NEEDED comfort food tonight!) with kabocha and parsnips and some duck that my mum cooked.
Love duck!! It’s so rich and delicious tasting
Bar the fact that 50% of the pasta pieces burst (hmph.) it was totally delicious. The sauce was really spicy and unusual and went well with the duck
SUCCESS!!
For an evening snack (extra important as I missed the afternoon!) – hot chocolate, 2% and 2 pieces of chocolate.
Now- Masterchef and 8 Out of 10 Cats awaits!! I tried to do some reading, and literally burst into tears at the thought….maybe best if I leave that til the morning!?

I also hate cauliflower… gah. I do, however, LOVE stuffed pasta (ultimate comford food). My mum always gave it to me when I was younger, I must buy some soon!!! I love duck as well, I think it’s probably the one thing i’d miss if I went veggie!

So for cauliflower, I used to hate it too, but once I made a cauliflower cheese pie with a sweet potato crust, I became a fan forever.
OH WOW that sounds delicious! I know I hate cauliflower and cooked cheese…but with a sweet potato crust, yum! Do you have a recipe?
I have recently started to like cauliflower but have always hated it until now. I especially like it roasted but the truth is, I like most any veggie roasted
Roasting it! Of course – I love all veggies roasted as well, so why haven’t I ever done that!? I’m gong to try next week
