Woke up.
Was very tired.
WordPress died on me last night…and this post needed to be prepared ahead of time cos I have lectures aaaalll day today, so I stayed up very late (when it decided to work again!)
BUT if this post is a tad dreary, I WILL make up for it later with a far more fascinating post !!
Anyways, back to wherever I was…
Woke up.
Was Tired.
Ate half a banana and a square of chocolate and went for a quick run:
- Mile 1 – 8.05
- Mile 2 – 8.16
- 1km – 5.09
Total: 4.2km in 21 mins
Came back. Had a WELL GROOVY BREAKFAST!! I thought I’d be a lil bit different this morning….enter -
Cous Cous Overnight ‘Oats’!!
I was going to make overnight oats the normal way, then just as I’d put some in the bowl, I thought ‘NEINE FREYA! Be DIFFERENT!’ So I dug out the old wholewheat cous cous and played with that instead
Overnight cous cous consisted of:
- 1/6th cup oatmeal
- 1/4 cup cous cous
- 100g 2% Greek
- 1/2 cup soy milk
- maybe 1/3 ish cup water? I’m not sure..I added it from the tap
- Cinnamon
- Topped with my new fave: hot blueberries with cinnamon and agave and a tsp 2% Greek!! As well as Soya and Linseed Bran, Puffed Wheat, and a tsp of PB
Nom nom, it was soooo good!! We have a winner folks
I saved a pretty much all the PB and a load of hot blueberry for a totally delicious final mouthful
Then twas a rush off to a lab class, which was highly dull..before I walked home quickly again, packed my stuff up ready for HOMETIME this weekend, and drove back to uni (for a quick getaway after my next set of lab classes :p)
Before my first class, I snacked on the other half of my banana, and then had a groovy tuna salad, which was quite simply:
- Tin of tuna
- Roast aubergine
- Roast brussels
- Roast mushrooms
- All sprinkled liberally with cumin (and s&p)
One tasty flavour kick there!!
That was PartI of lunch – I have a plan to do some Jillian when I get home, and I wanted to be fresh and fit and full of carbs for it! So on my way home, I battled through the I’m-not-at-all-hungry feeling, and ate my carb portion of lunch: chickpeas, salad leaves, kiwi and yellow cherry tomatoes, with lots of cinnamon and balsamic:
D-E-Lightful!! Such sweet fresh pretty (bright?) flavours! I lurver it very much.
Anyway – brief post ay (all the more reason to re-read my last post from yesterday
), but I have to dash! See you after dinner, with many merry things to say! :D

Wonderful idea to use couscous in overnight oats!! And I never would have thought to combine tuna with roasted veggies, I mainly just add it to raw salads. Thanks!!
